Măng tươi đem luộc chín, xả lại bằng nước 2-3 lần, cắt mỏng. Tôm làm sạch, bóc vỏ, bỏ đầu và đuôi, rạch bỏ chỉ đen trên lưng tôm.
Hành tím bóc vỏ, cắt nhỏ. Thịt nạc vai cắt mỏng, trộn với hành tím trong chén. Hành lá, ngò rí rửa sạch, cắt nhỏ.
Làm nóng 1 muỗng canh dầu ăn trong chảo, cho thịt nạc vai, tôm cùng gia vị 1 muỗng cà phê hạt nêm, 1 muỗng cà phê muối, 1 muỗng cà phê dầu hào vào, đảo đều khoảng 5 phút.
Trong 1 chảo khác, làm nóng 1 muỗng canh dầu ăn còn lại. Cho măng tươi, nấm mèo vào, đảo đều khoảng 5 phút.
Tiếp theo, cho miến, tôm, thịt nạc vai đã xào vào cùng, đảo đều. Nêm gia vị 1 muỗng canh nước mắm, 1/2 muỗng cà phê bột ngọt cho vừa ăn.
Cho món ăn ra đĩa hoặc tô, rắc hành lá, ngò rí lên trên là có thể dùng ngay!
